Birds Nest Soup

Ingredients

Birds Nests.

Method

  1. Soak nests for 2 hours in cold water, this brings out the sticky substance from the nests.
  2. Clean the nests (removing feathers, shells and other impurities).
  3. Blanch the nests for 5-6 minutes.
  4. Bring some chicken consomme to the boil and add the nests.
  5. Simmer for 45 minutes.
During cooking the nests disintegrate and the sticky substance gives the soup its characteristic gloopiness. Delicious!
